Behavioural change only gets you so far energy saving equipment is the real game changer in making sure your kitchen gets the green light. The energy efficiency of an appliance always used to be a bit of an added bonus or an expensive luxury for a school. Today, it really isn't an expensive luxury anymore and schools really do have a moral obligation to purchase equipment that saves energy. The total energy consumption of Britain's catering industry is estimated to be in excess of 21,600m kWh per year, according to the government, with more than 50% of this energy used in cost sector catering including schools and colleges. Elsewhere in the kitchen, warewashing has come on leaps and bounds within the energy saving sector. As Bob Wood, Managing Director, DC Warewashing and Icemaking systems comments, "because warewashers have historically been one of the largest energy consumers in the kitchen, they are also in a position to be one of the greatest savers. Buying decisions for new warewashing are all about ease of use, reliability, energy consumption and high quality wash results from the smallest possible footprint. |
