Why choosing the right warewashing equipment can make sure your operation sparkles.

F&B venues cannot afford for their warewashing equipment to be out of action. Firstly, warewashing equipment is key to the smooth running of any F&B operation - a breakdown, especially in a busy restaurant with many covers, can result in the backing up of the system with kitchen utensils, plates, equipment and cutlery waiting to be cleaned before it can be used again.

Operators can also not afford for their warewasher to underperform, with the importance placed on performance extending far beyond the kitchen.

"If you are looking at buying a new warewasher that will help you achieve environmental sustainability and cut running costs, make sure it includes the latest energy-saving innovations," says Bob Wood, director of DC Warewashing & Icemaking Systems.

There are also warewashers on the market which are intuitive - sensing when only one of two baskets has been loaded. The machine then reacts and activates just one of its independent wash zones, while the other stays in stand-by mode, saving energy.

Intelligent features have been high on the agenda for manufacturers, so there are now models that communicate any issues with users before they become major problems.

"Other innovative technological features that operators should look out for include peristaltic auto-dosing pumps - to ensure accurate dosing and avoid over- or under-dosing of chemicals - and integral water-softeners - to soften water, reduce chemical usage, prolong the life of the machine and improve results," adds Wood.

"Operators should look out for models featuring heat recovery systems which can reduce energy use by up to 25%," explains Wood. "The steam generated during the wash cycle is captured and transformed into energy to heat the incoming cold-water supply of the dishwasher."
