Although purchasing a new warewasher may seem like a simple enough task there's far more to consider than just the machine itself ... The University Caterers Organisation (TUCO) investigates.

From racks and drainage to tabling and water treatment - there's a lot to factor into a decision. From under-counter dish and glasswashers to pass through rack and flight machines and pot washers - there are numerous models out there to suit all kinds of set-up.

"The warewashing department can make or break the running of an efficient and safe university catering operation," says Bob Wood, director of DC Warewashing and Icemaking Systems. "So, identifying the right machine for the job is the first step to a successful wash up operation".

Advice such as:

  • Look for a machine that offers a reduced water cycle consumption, producing the optimum balance between water usage and hygiene.
  • To keep costs down ensure that the machine is double-skinned and preferably insulated.
  • Look for innovative wash pumps and assemblies that use less power but increase pressure.
  • Choose a low-volume wash tank that saves on water, electrical and chemical consumption.
