The bar is a stage for any drink creation, but there's a stellar cast of supporting equipment behind the scenes that lead to polished performances and tempting tipples.

From glasswashers to bottle coolers, each piece of equipment has the power to elevate the quality of drink served at a bar. There's a lot of energy that ends up in the glass, and icemakers are vital to any back bar to ensure drinks are served correctly.

There's a fine line between a watery, weak drink and a perfectly chilled cocktail. Cocktails, shorts and soft drinks all look and taste better when served in quality glasses with a generous amount of crystal clear, long-lasting ice. Therefore a reliable back bar icemaker capable of producing large amounts of ice, without taking up too much space, is essential behind the bar.

Pubs and bars can quite often have limited space available, so selecting a machine that won't obstruct the working space is vital. "If the layout has not been designed correctly then this will affect staff workflow, the efficiency to serve when demand is high and the impression of smooth, professional operation or one of chaos" explains Bob Wood, director of DC Warewashing & Icemaking systems.

"Get workflow wrong, or purchase the wrong equipment and you can end up with bottle necks, increased stress and frustration levels among employees, compromised hygiene standards, potential health and safety issues and ultimately downward pressure on efficiency and profitability."

Back bar staples like ice machines are essential to quality drinks, but those in the know have noticed low-grade models making their way on to the market.

"Ice is considered a food by the FSA, and all health and safety standards for food apply to ice," warns Bob Wood, "don't risk being seduced by low price."

Make sure that whatever machine you purchase has the following:

  • Is made from catering grade stainless steel.
  • Uses environmentally friendly refrigerant.
  • Fitted with high quality components.
  • Equipped with limescale-inhibiting evaporator plates.
  • Is made from insulated, non-toxic, ABS food-safe plastic.
  • Carries a credible manufacturer's warranty.
