Creating an efficient washing up system takes more than buying the right machine - there's a lot more operators need to take into consideration before making a purchase.

Warewashers are an integral part of any foodservice set up and therefore a significant investment in more ways than one. Aside from the cost there are several things that operators need to factor into their buying decisions - from space available and utility suppliers to installation and running costs. Therefore speaking to the experts is the perfect place to start.

Chemicals can be as important as the right machine in terms of the quality of wash. "Don't scrimp on detergents and chemicals - it's a false economy," says Bob Wood, director of DC Warewashing and Icemaking Systems. "Always purchase quality products based on the manufacturer's recommendation. This will not only ensure the day-to-day cleaning results of your machine, but will also preserve your machine's efficiency and longevity."

Opting to use cheaper, poor quality detergents will ultimately affect the results and efficiency of a machine. In some cases it can also render the manufacturer's warranty invalid.

A reputable company will strongly advise you to use the chemicals specified at the time of calibration, the balance of which will have been carefully worked out for your specific circumstances. It's easy for operators to underestimate the potency of chemicals and the importance of following the advised ratios.
